Featured Photo – Pan Style Jerk Chicken

Jerk is a style of cooking native to Jamaica. Jerk seasoning consists of pimento, scotch bonnet peppers cinnamon, scallions, nutmeg, thyme, garlic and other ingredients. Jerk seasoning is traditionally applied to pork and chicken. Oil barrels cut lengthwise, attached with hinges and drilled with ventilation holes are increasingly used to prepare jerk dishes and can be seen in major towns all over the island at night or at fairs, trade shows and various others gatherings and events.
